Healthy Baked Oatmeal

8-10 servings
Ingredients

3 cups rolled oats
Pinch of salt
1 teaspoon baking powder
2 Tablespoons ground flax, optional
1 T cinnamon
1 T pumpkin pie spice
1 cup milk, low fat dairy, rice milk or soymilk
2 eggs
1 granny smith apple, peeled, cored and diced
½ cup blueberries, frozen or fresh
½ cup raisins (or dried cranberries)

Crockpot Cheesy Chicken

Makes 6 servings.
Ingredients

6 boneless chicken breasts
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 (10.75-oz.) cans condensed cream of chicken soup
1 (10.75-oz.) can condensed cheddar cheese soup

 
Directions

Rub chicken breasts with salt, pepper and garlic powder.
Place chicken in slow cooker and pour soups over the top.
Cover and cook for 6 to 8 hours on low.

Butter Beef

Ingredients

3 pounds cubed beef stew meat
1/2 cup butter
1 (1 ounce) envelope dry onion soup mix

 
 
Directions

Place the beef and butter into a slow cooker.
Sprinkle the onion soup mix over.
Cover, and cook on Low for 8 hours, or High for 4 to 5 hours.
Stir once or twice.

Crock Italian Beef Sandwiches

Ingredients

3-4 lb roast, trimmed of fat
1 package Good Seasons Italian dressing mix
1/2 of a 16 oz jar of pepperoncini peppers, including the juice (in my store, these are next to the pickles)
1 can beef broth
swiss or provolone cheese slices
rolls (the crusty rolls from the bakery are nice but hamburger buns work fine too)

Crock Pot Thai Chicken Thighs

SERVES 4
Ingredients

8 boneless skinless chicken thighs
1 (16 ounce) jar cilantro salsa (or any salsa you prefer, since I HATE cilantro!!)
1/2 cup peanut butter (crunchy or creamy)
2 teaspoons ginger
2 tablespoons soy sauce
2 teaspoons lime juice

 

Directions

Put all ingredients in crock pot on low for 6-8 hours.
Garnish with scallions, and peanuts.
